Main course

For this Chinese wok dish you marinate thin strips of beef in soy sauce and starch and sear them briefly over high heat. Green and red bell pepper keep their bite, and oyster sauce and broth pull everything together into a glossy sauce. With rice, it takes about 40 minutes.

Ingredients

    For the meat:

    • 500 g beef rump or sirloin steak
    • 1 tbsp light soy sauce
    • 1 tbsp Shaoxing wine (Chinese cooking rice wine)
    • 1 tsp cornstarch
    • 1 tbsp water

    For the vegetables and sauce:

    • 2 green bell peppers
    • 1 red bell pepper
    • 1 onion
    • 3 garlic cloves
    • 1 tbsp freshly grated ginger
    • 3 tbsp oyster sauce
    • 100 ml beef broth or water
    • 1 tsp sugar
    • 1 tsp cornstarch
    • 2 tbsp cold water
    • 1 pinch of white pepper
    • 3 tbsp vegetable oil
    • 2 scallions for garnish

    Instructions

    1. Cut the beef against the grain into strips 5 mm thick and 5 cm long. Mix it with the soy sauce, Shaoxing wine, 1 tsp cornstarch and 1 tbsp water and let it sit for 15 minutes.
    2. Seed the bell peppers and cut them into 2 cm pieces. Cut the onion into wedges, chop the garlic and grate the ginger.
    3. Whisk the oyster sauce, broth, sugar, 1 tsp cornstarch, cold water and white pepper smooth in a small bowl.
    4. Heat the wok over the highest heat until it smokes and add 2 tbsp oil. Spread half the meat in the wok, leave it for 30 seconds, then stir-fry for 1 minute until browned on the outside. Take it out and fry the second half the same way.
    5. Add 1 tbsp oil to the wok and fry the onion for 2 minutes. Add the garlic and ginger and stir for 30 seconds, until fragrant.
    6. Add the bell peppers and fry for 2 minutes. The pieces should still have some bite.
    7. Return the meat to the wok, stir the sauce and pour it in. Toss everything for 1 minute, until the sauce thickens and turns glossy.
    8. Cut the scallions into rings, scatter them over the top and serve right away with steamed rice.
