Soup
Shoyu-style beef ramen is a Japanese noodle soup with a clear beef bone broth that you season with soy sauce and mirin. The broth tastes salty and hearty with a hint of sweetness, topped with quickly seared beef, a soft-boiled egg and nori. The broth simmers for at least two hours, and you have nothing to do in that time.

Ingredients
For the broth:
- 1.5 liters water
- 500 g beef bones or neck bones
- 2 large onions
- 1 whole head of garlic
- 1 piece of ginger (about 3 cm)
- 100 ml soy sauce
- 30 ml mirin
- 1 tbsp sake (optional)
- Salt to taste
- 1 tsp sugar
For the beef:
- 300 g beef brisket or another lean cut, thinly sliced
- 1 tbsp oil
- Salt and pepper to taste
For the ramen:
- 400 g fresh ramen noodles
- 2 scallions, in rings
- 4 sheets of nori
- 4 eggs
- 100 g bamboo shoots (menma)
- 20 g pickled ginger, optional
Instructions
Prepare the broth:
- Wash the beef bones thoroughly and put them in a large pot. Cover with 1.5 liters of water and bring to a boil. Skim off the foam that rises to the surface to get a clear broth.
- Dry-roast the onions, garlic and ginger in a pan over medium heat until lightly charred. This gives the broth a deep flavor.
- Add the roasted ingredients to the bones along with the soy sauce, mirin, sake, sugar and salt. Reduce to low heat and simmer for at least 2 hours, stirring occasionally.
- Strain the broth through a fine sieve into a clean pot. Taste and adjust the seasoning if needed.
Prepare the beef:
- Season the beef slices with salt and pepper. Sear them briefly on both sides in a pan over high heat with a little oil, just until cooked through. Set aside.
Assemble the ramen:
- Put the eggs in boiling water and cook for 7 minutes. Cool them right away in ice water, peel and halve them.
- Bring water to a boil in a large pot and cook the ramen noodles according to the package instructions. Take care not to overcook them. They should be soft on the outside and still slightly firm inside.
- Drain the noodles and divide them right away among four large bowls.
- Pour the hot broth over the noodles so they are almost covered.
- Arrange the beef slices, halved eggs, nori sheets and scallions on the noodles. Garnish with more toppings such as bamboo shoots, menma or pickled ginger, if using.
