Chapssaltteok is a sweet, sticky treat from Korean cuisine, similar to Japanese mochi but usually filled with sweet red bean paste. This recipe shows you how to make these popular sweet rice cakes at home.

Ingredients
- 200 g sweet rice flour (chapssalgaru)
- 200 ml water
- 1 pinch of salt
- 100 g red bean paste (anko)
- 1 tbsp sugar
- Potato starch for dusting
Instructions
- In a medium pot, stir the water, rice flour and salt until no lumps remain.
- Heat the mixture over medium heat, stirring constantly, until it turns thick and sticky.
- Put the dough on a surface dusted with potato starch and let it cool until it is lukewarm.
- Divide the dough into 10 equal pieces.
- Flatten each piece and put a tablespoon of red bean paste in the center.
- Close the dough around the filling and shape it into a ball.
- Dust the finished Chapssaltteok lightly with potato starch to keep them from sticking.
- Enjoy the Chapssaltteok fresh or store them in an airtight container.
