Dòu Huā, also known as tofu pudding, is a traditional Chinese dessert made from very soft tofu. It is usually served with a sweet ginger syrup and has a wonderfully smooth, silky texture.

Ingredients

  • 400 g silken tofu
  • 240 ml water
  • 100 g sugar
  • 1 piece ginger (about 5 cm), peeled and thinly sliced
  • Optional: 2 tbsp goji berries or other toppings

Instructions

  1. Make the ginger syrup by bringing the water, sugar and ginger slices to a boil in a small pot. Simmer the syrup for 5 minutes, until slightly thickened.
  2. Take the syrup off the heat and let it cool. Remove the ginger slices.
  3. Gently cut the silken tofu into cubes or spoon it into bowls.
  4. Pour the cooled ginger syrup over the tofu.
  5. Garnish the tofu pudding with goji berries or other toppings as you like.
  6. Chill the tofu pudding before serving, if you like.
