Main course
Gaeng pa, also known as jungle curry, is a spicy, fragrant Thai dish. Unlike most Thai curries it contains no coconut milk, so it tastes lighter while keeping all the flavor.

Ingredients
- 500 g chicken breast, cut into strips
- 2 tbsp red curry paste
- 1 tbsp fish sauce
- 1 tsp palm sugar
- 1 eggplant (aubergine), diced
- 100 g bamboo shoots, cut into strips
- 5 kaffir lime leaves
- 3 red chilies, chopped
- 5 Thai basil leaves
- 1 liter (4 cups) chicken stock
- 2 tbsp vegetable oil
- Salt to taste
Instructions
- Heat the oil in a large pot and fry the red curry paste for about 2 minutes.
- Add the chicken strips and cook for 5 minutes until almost done.
- Add the eggplant, bamboo shoots, chilies and kaffir lime leaves and cook for another 5 minutes.
- Pour in the chicken stock and bring to a boil.
- Season with the fish sauce, palm sugar and salt to taste, then simmer the curry for 15 minutes.
- Take the pot off the heat and stir in the Thai basil leaves.
- Serve hot.
