Gai Yang is a popular Thai dish from the Isaan region. It is marinated grilled chicken, traditionally cooked over charcoal. The marinade gives the chicken a spicy, aromatic flavor shaped by herbs and spices such as cilantro, garlic and lemongrass.

Ingredients
- 4 chicken legs (thigh and drumstick)
- 2 stalks lemongrass, finely chopped
- 6 garlic cloves, chopped
- 2 shallots, chopped
- 1 bunch fresh cilantro, chopped
- 1 tsp black pepper
- 2 tbsp fish sauce
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tsp turmeric
- Juice of 1 lime
- Vegetable oil for brushing
- Charcoal for grilling
Instructions
- Blend the lemongrass, garlic, shallots, cilantro, black pepper, fish sauce, soy sauce, brown sugar, turmeric and lime juice into a smooth marinade.
- Wash the chicken legs, pat them dry and cut shallow slits so the marinade soaks in better.
- Rub the chicken legs with the marinade and marinate in the fridge for at least 4 hours, ideally overnight.
- Preheat the charcoal grill and grill the chicken over medium heat for about 20-25 minutes on each side, brushing regularly with oil.
- Take the grilled chicken off the heat and let it rest for a few minutes before serving.
