Ingredients

  • 1 kg pork spine, cut into pieces
  • 2 liters water
  • 1 large onion, halved
  • 4 garlic cloves, whole
  • 2 pieces of ginger (about 5 cm / 2 in)
  • 100 g Korean rice cakes (tteokbokki tteok)
  • 200 g shiitake mushrooms, quartered
  • 300 g potatoes, diced
  • 1 bunch of scallions, cut into pieces
  • 2 tbsp gochujang (Korean chili paste)
  • 1 tbsp gochugaru (Korean chili powder)
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • Salt and pepper to taste
  • 1 tsp sesame seeds
  • Fresh cilantro, to garnish

Instructions

  1. Cover the pork spine with water in a large pot, bring to a boil and boil for 10 minutes. Skim off the foam and pour off the water.
  2. Return the pork spine to the pot, add fresh water, then add the onion, garlic and ginger and bring to a boil. Reduce the heat and simmer for 1.5 hours.
  3. Add the rice cakes, mushrooms and potatoes and cook for another 20 minutes, until the potatoes are soft.
  4. Add the scallions, gochujang, gochugaru, soy sauce and sesame oil. Season with salt and pepper and simmer for another 10 minutes.
  5. Ladle the soup into bowls and garnish with sesame seeds and fresh cilantro. Serve hot.
