Main course

Hainan Ji Fan is a whole chicken that you poach gently in broth with ginger, served with jasmine rice cooked in the same broth with garlic and ginger. The meat stays tender and juicy, and the rice takes on the flavor of the chicken broth. Serve soy sauce and chili sauce on the side for dipping.

Ingredients

  • 1 whole chicken (about 1.5 kg)
  • 2 liters water
  • 3 slices ginger
  • 3 stalks scallions
  • 2 tsp salt
  • 400 g jasmine rice
  • 4 garlic cloves, finely chopped
  • 3 slices ginger, finely chopped
  • 600 ml chicken broth (from the cooked chicken)
  • 2 tbsp sesame oil
  • Soy sauce, for serving
  • Chili sauce, for serving
  • Chopped cilantro, for garnish

Instructions

  1. Rub the chicken inside and out with salt and stuff it with the ginger slices and scallions.
  2. Bring water to a boil in a large pot, add the chicken and simmer over medium heat for 1 hour, until fully cooked.
  3. Take the chicken out of the broth, plunge it into ice water to tighten the skin, then let it dry.
  4. Wash the rice under running water until the water runs clear.
  5. Heat the sesame oil in a pot and fry the garlic and ginger until fragrant.
  6. Add the washed rice and stir-fry briefly, then add the chicken broth and cook the rice according to the package instructions.
  7. Cut the chicken into pieces and arrange them on a platter. Garnish with chopped cilantro.
  8. Serve the cooked rice on a separate plate, with soy sauce and chili sauce on the side.
