Bái fàn jiā shū cài is cooked jasmine rice that you toss in a pan with carrot, bell pepper, broccoli and snow peas. Sesame oil, garlic and ginger season the vegetables, and soy sauce adds salt. It takes about 25 minutes.

Ingredients
- 400 g jasmine rice
- 600 ml water
- 1 medium carrot, cut into thin slices
- 1 red bell pepper, cut into strips
- 100 g broccoli, cut into small florets
- 100 g snow peas
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 garlic cloves, finely chopped
- 1 tsp grated ginger
- Salt to taste
- Fresh cilantro leaves for garnish
Instructions
- Wash the rice thoroughly and bring it to a boil with the water in a pot. Reduce the heat and simmer the rice covered for 10 to 12 minutes, until the water is absorbed.
- While the rice cooks, heat the sesame oil in a pan. Add the garlic and ginger and fry for 2 minutes.
- Add the carrot, bell pepper and broccoli and fry for 5 minutes, stirring occasionally.
- Add the snow peas and cook for another 3 minutes.
- Add the cooked rice, stir well and season with soy sauce and salt.
- Take the dish off the heat and garnish with fresh cilantro leaves.
- Serve immediately.
