Kafe Lao (ກາເຟລາວ) – Coffee with Sweetened Condensed Milk

Kafe Lao comes from the Bolaven Plateau in southern Laos, where farmers mostly grow Robusta. At street stalls, they brew the dark-roasted coffee in a cloth sock and pour it over sweetened condensed milk. The result is a strong, sweet coffee with little acidity. In the morning you drink it hot, in the afternoon over ice as Kafe Yen. It goes well with khao jee, the Lao baguette, or fried dough sticks.

Drink

Kafe Lao is the strong Robusta coffee from the Bolaven Plateau in Laos, which you brew through a cloth filter and pour over sweetened condensed milk. Unlike Vietnamese cà phê sữa đá with a metal filter, the coffee runs through a coffee sock here. You drink it hot or over ice.

Ingredients

  • 20 g dark-roasted Robusta coffee, medium-ground
  • 200 ml water, freshly boiled
  • 30 g sweetened condensed milk
  • Ice cubes, as desired

Instructions

  1. Rinse the coffee sock with hot water and hang it over a pot.
  2. Put the condensed milk in a heatproof glass.
  3. Spoon the ground coffee into the sock and pour 50 ml hot water over it. Let the grounds bloom for 30 seconds.
  4. Slowly pour in the remaining water in two batches and let it run through for 3 minutes. Then dip the sock briefly into the coffee in the pot twice.
  5. Pour the coffee over the condensed milk and stir until it is an even light brown.
  6. Drink it hot or pour it over a glass of ice cubes.
