Side dish

Thai-style fried eggs, known as "Kai Dao" in Thailand, are far more than simple fried eggs. In Thai cooking they become an artful and flavorful delicacy, with crispy edges, a slightly runny yolk, and rich seasoning. The dish reflects the Thai philosophy of bringing even the simplest ingredients to life with technique and seasoning. Kai Dao is often served as a side with a wide range of dishes, from fried rice to spicy curries, and brings a plain but hearty element to any meal. What sets Thai-style fried eggs apart is the cooking method, in which the eggs are fried in plenty of hot oil, which gives them their characteristic crispy edges. This technique, similar to deep-frying, exposes the eggs to high heat, so the whites set quickly while the yolk stays tender. The eggs are often turned in a mixture of soy sauce and sometimes tamarind sauce, which adds another layer of flavor.
Crispy Thai-Style Fried Eggs | Kai Dao Recipe

Ingredients

  • 4 large eggs
  • 120 ml vegetable oil for frying
  • 1 tbsp light soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tsp fish sauce
  • 1 tsp sugar
  • Fresh cilantro for garnish
  • Fresh red chilies, finely sliced, for garnish (optional)

Instructions

  1. Prepare the sauce: In a small bowl, mix the light soy sauce, oyster sauce (if using), fish sauce, and sugar. Stir until the sugar has dissolved, and set aside.
  2. Heat the oil: Heat the vegetable oil in a deep pan or wok over medium-high heat. The oil should be hot enough to sizzle around the eggs when they go in.
  3. Fry the eggs: Carefully slide the eggs into the hot oil one at a time. It should bubble right away and the edges should start to crisp. Fry until the edges are golden brown and crispy but the yolk is still slightly runny, about 2 to 3 minutes per egg.
  4. Drain the eggs: Carefully lift the eggs out with a slotted spoon and drain them on paper towels to remove excess oil.
  5. Serve: Arrange the fried eggs on a plate, drizzle the prepared sauce carefully over them, and garnish with fresh cilantro and, if you like, fresh chilies.
