Main dish
Khao Mok Neua is a popular Thai dish often called the 'Thai biryani'. It consists of aromatically spiced rice cooked together with tender beef. The mix of spices and herbs gives the dish a distinctive aroma and a bright yellow color.

Ingredients
- 500 g beef, cut into cubes
- 400 g basmati rice
- 1 l beef stock
- 1 large onion, diced
- 4 garlic cloves, finely chopped
- 1 piece ginger (about 5 cm), finely chopped
- 2 tbsp yellow curry paste
- 1 tsp ground turmeric
- 1 tsp garam masala
- 1/2 tsp ground cumin
- 4 cardamom pods
- 4 cloves
- 1 cinnamon stick
- 2 bay leaves
- Juice of 1 lime
- 3 tbsp vegetable oil
- Fresh cilantro, for garnish
- Salt and pepper, to taste
Instructions
- Heat the oil in a large pot and sauté the onions, garlic and ginger.
- Add the beef and brown it on all sides.
- Add the yellow curry paste, turmeric, garam masala, cumin, cardamom, cloves, cinnamon and bay leaves and stir.
- Add the beef stock and bring to a boil. Reduce the heat and simmer for 45 minutes.
- Wash the rice and add it to the meat in the pot. Stir everything well and keep simmering until the rice has absorbed the liquid and is tender (about 30 minutes).
