Main course
Khao pad pong kari is Thai fried rice with chicken, egg and yellow curry powder. It tastes of mild curry, a little sweetness and the savory depth of fish and soy sauce. With rice from the day before, the dish is on the table in 30 minutes.

Ingredients
- 320 g cooked jasmine rice, ideally from the day before
- 200 g chicken breast, cut into small pieces
- 1 medium onion, diced
- 2 garlic cloves, finely minced
- 1 red bell pepper, cut into strips
- 2 eggs
- 2 tbsp yellow curry powder
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tsp sugar
- 4 scallions, cut into rings
- 15 g fresh cilantro, roughly chopped
- 2 tbsp vegetable oil
Instructions
- Heat the oil in a large pan or wok over medium heat.
- Add the onion and garlic and cook until soft.
- Turn up the heat, add the chicken and fry until cooked through.
- Push the chicken to the side and crack the eggs into the pan. Stir until the eggs are set.
- Add the rice, bell pepper and the seasonings (curry powder, soy sauce, fish sauce and sugar) and fry everything until the rice is hot and the seasonings are evenly distributed.
- Add the scallions and fry for another 2 minutes.
- Take the wok off the heat and stir in the fresh cilantro.
- Serve the fried rice hot.
