Khao Piak Khao (ເຂົ້າປຽກເຂົ້າ) – Lao Rice Porridge with Chicken

Many Lao people eat khao piak khao in the morning at street stalls, often with a piece of youtiao, a fried dough stick. The rice cooks in chicken broth until the grains burst and the porridge thickens. Ginger and lemongrass season the broth gently. The punch comes at the end: fried garlic with its oil, scallions, cilantro and a squeeze of lime. Add chili oil to make it as hot as you like.

Breakfast

Khao Piak Khao is the Lao rice porridge for breakfast: jasmine rice cooks in chicken broth with ginger until the grains burst and everything turns creamy. In Thai khao tom, the grains stay whole in a clear broth. Fried garlic, cilantro and lime go in only once the porridge is in the bowl.

Ingredients

  • 150 g jasmine rice
  • 1.5 l chicken stock
  • 400 g boneless, skinless chicken thighs, in 2 cm pieces
  • 3 cm ginger, in thin strips
  • 1 stalk lemongrass, bruised
  • 2 tbsp fish sauce
  • 1 tsp sugar
  • 1/2 tsp white pepper

To serve:

  • 6 garlic cloves, thinly sliced
  • 3 tbsp vegetable oil
  • 2 scallions, sliced into rings
  • 10 g cilantro, chopped
  • 1 lime, quartered
  • Chili oil, to taste

Instructions

  1. Wash the rice in cold water until it runs almost clear and let it drain.
  2. Bring the stock to a boil with the ginger and lemongrass, add the rice and simmer partly covered for 30 minutes. Stir every 5 minutes so nothing sticks to the bottom.
  3. Add the chicken and cook it for 12 minutes, until white inside and the rice grains have burst. If the porridge gets too thick, stir in 100 to 200 ml hot water.
  4. Meanwhile, fry the garlic in the oil over medium heat for 3 to 4 minutes, until light golden. Lift it onto paper towels with a slotted spoon and save the oil.
  5. Remove the lemongrass and season the porridge with fish sauce, sugar and pepper.
  6. Divide the porridge among bowls, drizzle 1 tsp garlic oil over each and scatter garlic, scallions and cilantro on top. Put out the lime and chili oil.
