Kkori Gomtang is a traditional Korean oxtail soup that simmers for a long time, until the meat is tender and the broth turns milky white. This hearty, nourishing dish is especially popular in the cold months.

Ingredients
- 1 kg oxtail
- 2 liters water
- 1 large onion, halved
- 4 garlic cloves
- 2 scallions, chopped
- 1 tsp black pepper
- Salt to taste
- cooked rice, to serve
Instructions
- Wash the oxtail thoroughly and put it in a large pot.
- Add water to cover the oxtail and bring to a boil. Skim off the foam carefully.
- Add the onion, garlic cloves and black pepper. Reduce the heat and simmer over low heat for 6 hours, until the broth is milky white.
- Take the meat out of the pot, let it cool and pull the meat off the bones.
- Pour the soup through a fine sieve and skim off the fat.
- Return the meat to the soup and season with salt.
- Heat the soup and garnish with scallions. Serve with cooked rice.
