Makgeolli pajeon is a Korean pancake with plenty of scallions, and you mix the batter with makgeolli. The rice wine gives the batter a light tang, and you fry the edges crisp. Eat it as a snack, a side or a main course.

Ingredients
- 125 g all-purpose flour
- 60 g rice flour
- 240 ml makgeolli (Korean rice wine)
- 240 ml water
- 1/2 tsp salt
- 200 g chopped scallions (about 2 bunches)
- 50 g finely sliced red bell pepper
- 1 green chili, finely chopped
- Vegetable oil for frying
Instructions
- Stir the flour, rice flour, makgeolli, water and salt in a large bowl to a smooth batter.
- Add the scallions, red bell pepper and green chili and mix well.
- Heat a pan over medium heat and add a little vegetable oil.
- Pour a ladle of batter into the pan and spread it evenly.
- Fry the pancake for 2-3 minutes per side, until golden and crisp.
- Drain the finished pancake on paper towels and serve warm.
