Korean drug eggs, known as "Mayak Gyeran" (마약 계란), are a popular delicacy in Korean cooking. "Mayak" means "drug" in Korean, which refers to how addictive these eggs are. They are easy to make and can be added to many meals and snacks. Origin and popularity: Mayak gyeran come from Korea, where they are a regular part of the food culture. They are often served as a side dish with rice, in bento boxes or as a quick snack. You find them especially at street markets in Seoul, where people value their intense flavor and tender texture. Flavor and texture: These eggs combine a sweet, salty and mildly spicy taste. The marinade of soy sauce, mirin, sugar and aromatics like garlic and onion soaks deep into the eggs and gives them an intense flavor. The eggs are often soft-boiled, so the yolk is creamy and goes well with the savory marinade. Nutrition: Eggs provide high-quality protein, vitamins and minerals. Garlic and onion in the marinade add flavor without adding fat. Preparation and variations: Mayak gyeran are simple and need only a few ingredients. You can soft-boil or hard-boil the eggs, depending on the texture you prefer. You can also adjust the marinade to change the flavor. For example, adding gochujang (Korean chili paste) or gochugaru (Korean chili powder) gives it a spicy note. The eggs also work outside Korean dishes. You can use them as a topping for ramen, as part of salads or simply as a snack.

Ingredients

    For the eggs

    • 6 large eggs

    For the marinade

    • 1/2 cup water
    • 1/4 cup mirin (Japanese rice wine) or apple juice
    • 2 tbsp sugar
    • 1 tbsp sesame oil
    • 1 tbsp sesame seeds (toasted)
    • 4 garlic cloves (finely chopped)
    • 1 small onion (finely chopped)
    • 1 small chili pepper (optional, finely chopped)
    • 1/2 cup soy sauce

    Instructions

      Cook the eggs

      1. Put the eggs in a pot and cover them with cold water.
      2. Bring the water to a boil and cook the eggs for 6 to 7 minutes for soft-boiled eggs. For hard-boiled eggs, extend the cooking time to 10 minutes.
      3. Put the eggs straight into ice water and let them cool completely before peeling.

      Make the marinade

      1. In a bowl, mix the soy sauce, water, mirin (or apple juice), sugar and sesame oil.
      2. Add the garlic, onion and chili pepper (if using).
      3. Add the toasted sesame seeds and mix everything well.

      Marinate the eggs

      1. Put the peeled eggs in a container that is big enough to hold all the eggs but small enough that the marinade covers them completely.
      2. Pour the marinade over the eggs and make sure they are completely covered.
      3. Cover the container and marinate in the refrigerator for at least 6 hours, ideally overnight.

      Serve

      1. Take the eggs out of the marinade and halve or slice them.
      2. Drizzle with a little of the marinade and, if you like, garnish with extra sesame seeds and finely chopped scallions.
