Ingredients

  • 500 g pork loin, cut into thin strips
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp fish sauce
  • 1 tbsp palm sugar
  • 1 tsp white pepper
  • 3 garlic cloves, crushed
  • 750 ml oil for deep-frying
  • Fresh cilantro leaves for garnish

Instructions

  1. Marinate the pork strips in a bowl with the light soy sauce, dark soy sauce, fish sauce, palm sugar, white pepper and garlic. Marinate in the fridge for at least 6 hours.
  2. Take the marinated meat out of the fridge and spread it on a baking sheet. Let the meat dry at room temperature for about 2 hours, or until lightly dried.
  3. Heat plenty of oil in a deep pan or deep fryer. Fry the pork strips in batches until golden brown and crispy.
  4. Drain the fried meat on paper towels to remove excess oil.
  5. Garnish with fresh cilantro leaves and serve.
