Main course

Moo Tod Nam Pla is a simple, popular Thai dish in which pork is marinated and then fried until crisp. The fish sauce gives the meat a salty, umami-rich edge.
Moo Tod Nam Pla (หมูทอดน้ำปลา), pork with fish sauce

Ingredients

  • 500 g pork belly, cut into strips
  • 3 tbsp fish sauce
  • 1 tsp sugar
  • 2 garlic cloves, finely chopped
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil for frying
  • Fresh cilantro for garnish
  • 2 red chilies, sliced into rings (optional)

Instructions

  1. Marinate the pork belly strips in a bowl with the fish sauce, sugar, chopped garlic and black pepper. Let them marinate in the fridge for at least 1 hour.
  2. Heat the vegetable oil in a pan over medium to high heat.
  3. Add the marinated pork belly strips to the hot pan and fry until golden brown and crisp on both sides, about 5 to 7 minutes per side.
  4. Lay the fried meat on paper towels to remove excess oil.
  5. Arrange the pork on a plate and garnish with fresh cilantro and, if you like, red chilies.
