Salad
Mu Saengchae is a traditional Korean salad of thinly cut radish in a spicy dressing. The crunchy radish meets a hot, sweet and sour marinade. Serve it as a side with grilled meat or as part of a Korean spread.

Ingredients
- 1 large Korean radish (or white radish/daikon), peeled and cut into matchsticks
- 1 tablespoon salt
- 2 tablespoons Korean chili powder (gochugaru)
- 1 tablespoon sugar
- 2 tablespoons apple cider vinegar
- 1 tablespoon soy sauce
- 2 teaspoons sesame oil
- 2 garlic cloves, finely chopped
- 1 scallion (green onion), thinly sliced
- 1 teaspoon toasted sesame seeds
Instructions
- Toss the radish strips with the salt and let them sit for 10 minutes to draw out water.
- Squeeze the water out of the radish and put it in a large bowl.
- In a small bowl, mix the chili powder, sugar, cider vinegar, soy sauce, sesame oil and chopped garlic to make the dressing.
- Pour the dressing over the radish and mix thoroughly.
- Add the sliced scallion and mix again.
- Sprinkle with toasted sesame seeds and let the salad stand for at least 15 minutes before serving so the flavors can develop.
