Drinks
Nam Takrai is a Thai cold drink made from simmered lemongrass, sugar and lime juice. It tastes lemony and lightly sweet and cools you down on hot days.

Ingredients
- 4 stalks lemongrass
- 960 ml water
- 50 g sugar
- 2 limes, juiced
- 300 g ice cubes
- 4 mint leaves for decoration
Instructions
- Wash the lemongrass, remove the outer layers and cut the stalks into pieces about 5 cm long.
- Lightly bruise the lemongrass with a mortar or the back of a knife to release the aromas.
- Bring the water to a boil in a pot and add the prepared lemongrass.
- Reduce the heat and simmer the lemongrass gently for about 10 minutes.
- Add the sugar and stir until it has completely dissolved.
- Take the pot off the heat and pour the lemongrass infusion through a fine sieve to remove the solids.
- Squeeze the lime juice into the infusion and stir well.
- Let the drink cool to room temperature and then chill it in the fridge for at least 1 hour.
- Pour the chilled lemongrass drink into glasses, add ice cubes and decorate with mint leaves.
