Nasi Hujan Panas: colorful Malaysian wedding rice

Ingredients

  • 300 g basmati rice
  • 1 onion
  • 3 garlic cloves
  • 2 cm ginger
  • 3 tbsp ghee (clarified butter)
  • 1 cinnamon stick
  • 3 cardamom pods
  • 3 cloves
  • 2 star anise
  • 1 pandan leaf (screwpine leaf), tied in a knot
  • 400 ml water
  • 100 ml unsweetened condensed milk (evaporated milk)
  • 1 tsp salt
  • 1/4 tsp red, 1/4 tsp yellow and 1/4 tsp green food coloring, each stirred into 1 tbsp water
  • 30 g raisins
  • 30 g cashews
  • 2 tbsp fried onions

Instructions

  1. Wash the rice until the water stays clear, soak it for 20 minutes and let it drain.
  2. Blend the onion, garlic and ginger with 2 tbsp of water into a paste.
  3. Heat 2 tbsp of ghee in a pot, fry the cinnamon, cardamom, cloves and star anise for 1 minute and add the paste. Fry it for 4 minutes, until the water has evaporated and it smells fragrant.
  4. Toast the rice with it for 2 minutes, until the grains shine.
  5. Pour in the water and condensed milk, add the salt and pandan and bring to a boil. Cook the rice covered over the lowest heat for 12 minutes, until small holes appear on the surface.
  6. Drizzle the three colors over the rice in stripes with a teaspoon, without stirring. Close the lid and cook the rice for another 10 minutes, then let it rest off the heat for 5 minutes.
  7. Fry the cashews and raisins in the remaining ghee for 2 minutes, until the raisins puff up.
  8. Fluff the rice with a fork, plate it and sprinkle with the cashews, raisins and fried onions.
