Dessert
Num Ka Pong are small fried dough balls from Cambodia, made with rice flour and coconut milk. They turn golden brown and crisp on the outside and stay soft and lightly sweet inside. Eat them warm as a snack, with powdered sugar if you like.

Ingredients
- 250 g rice flour
- 60 g all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2 tbsp sugar
- 1 egg
- 240 ml coconut milk
- 1 tsp vanilla extract
- Oil for deep-frying
- Powdered sugar for dusting (optional)
Instructions
- In a large bowl, mix the rice flour, all-purpose flour, baking powder, salt and sugar.
- In another bowl, beat the egg and add the coconut milk and vanilla extract.
- Add the wet ingredients to the dry ones and stir well until you have a smooth batter.
- Cover the dough and let it rest in a warm place for about 1 hour, until slightly risen.
- Heat the oil in a deep pot or fryer to 180 °C (350 °F).
- With lightly oiled hands, shape small portions of dough and roll them into balls.
- Carefully lower the dough balls into the hot oil and fry on all sides until golden brown, about 3-4 minutes.
- Remove with a slotted spoon and drain on paper towels.
- Dust with powdered sugar before serving, if you like.
