Oshi sushi, also known as pressed sushi, is a traditional Japanese style of sushi in which the rice and toppings are pressed into a special mold. This recipe uses salmon and avocado for a tasty, good-looking combination.

Ingredients
- 300 g sushi rice
- 360 ml water
- 60 ml rice vinegar
- 2 tbsp sugar
- 1 tsp salt
- 200 g fresh salmon, sliced
- 1 ripe avocado, sliced
- 2 nori sheets, cut to size
- 1 tsp wasabi
- 4 tbsp soy sauce
Instructions
- Wash the sushi rice as directed on the package and cook it with the water.
- Heat the rice vinegar with the sugar and salt in a small pot until everything dissolves. Fold the mixture into the cooked rice and let it cool.
- Line an oshi sushi mold with plastic wrap.
- Add a layer of rice to the mold and press it down firmly.
- Lay a layer of salmon slices over the rice, followed by a layer of avocado slices.
- Add another layer of rice and press down again.
- Take the sushi out of the mold, remove the wrap and wrap the sushi in nori sheets.
- Cut the sushi into even pieces and serve with wasabi and soy sauce.
