Pla Rad Prik is a classic Thai dish: a whole fish fried until crisp and served with a hot chili sauce. The sauce balances sweet, sour and spicy.

Ingredients

  • 1 large white fish (such as tilapia or sole), cleaned and gutted
  • 1 cup cornstarch
  • 2 cups vegetable oil for frying
  • 4 garlic cloves, chopped
  • 2 red chilies, seeded and chopped
  • 2 shallots, finely chopped
  • 1/4 cup tamarind juice
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 1/4 cup water
  • Fresh cilantro for garnish

Instructions

  1. Pat the fish dry and dust it with the cornstarch.
  2. Heat the oil in a pan and fry the fish on both sides until golden and crisp. Drain on paper towels.
  3. For the sauce, heat the remaining oil in a pan. Add the garlic, chili and shallots and fry until soft.
  4. Add the tamarind juice, fish sauce, sugar and water and simmer until the sauce thickens slightly.
  5. Place the fried fish on a serving platter and pour the hot sauce over it.
  6. Garnish with fresh cilantro and serve right away.
