Seasonings
Rayu is a hot, aromatic oil from Japanese cuisine, often used to boost the flavor of dishes like gyoza, ramen or even simple rice bowls. It combines the heat of chili with the nutty flavor of sesame oil.

Ingredients
- 150 ml pure sesame oil
- 2 tbsp chili flakes
- 1 tbsp finely chopped garlic
- 1 tsp grated ginger
- 1 tsp sugar
- 1/2 tsp salt
Instructions
- Heat the sesame oil in a small pot over medium heat until hot but not smoking.
- Add the garlic, ginger, sugar and salt and reduce the heat to low. Let the mixture simmer for 2 minutes, taking care that the garlic does not burn.
- Take the pot off the heat and add the chili flakes. Stir to make sure everything is well mixed.
- Let the oil cool for at least 30 minutes so the flavors can develop.
- Strain the oil through a fine-mesh sieve into a clean jar. Press lightly on the solids while straining to extract all the oil and flavor.
- Close the jar and store the rayu in the fridge.
