Hai Xian Chao Fan is fried rice with shrimp, squid and mussels, plus egg, peas and carrot. Soy sauce, oyster sauce and sesame oil give the rice a salty, savory note. You need about 35 minutes and a wok or a large pan.

Ingredients
- 600 g cooked rice, preferably from the day before
- 200 g mixed seafood (e.g. shrimp, squid, mussels)
- 100 g peas, frozen or fresh
- 1 carrot, diced
- 3 scallions, sliced
- 2 eggs, beaten
- 2 garlic cloves, finely chopped
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- Salt and pepper to taste
- Oil for frying
Instructions
- Heat a little oil in a large pan or wok over high heat.
- Add the garlic and stir-fry briefly until fragrant.
- Add the seafood and fry until almost cooked. Take it out of the pan.
- In the same pan, add the eggs and stir quickly to make scrambled egg.
- Add the carrots and peas and cook for a few minutes, until soft.
- Add the cooked rice and scallions and stir well.
- Stir in the pre-cooked seafood, soy sauce, oyster sauce and sesame oil.
- Fry everything together for about 5-7 minutes, stirring constantly, until the rice is hot and slightly crisp.
- Season with salt and pepper and serve hot.
