Main dish

Japanese tantanmen ramen goes back to Chinese dan dan noodles. You serve ramen noodles in a spicy broth with chili paste and top them with stir-fried ground meat, peanut butter and sesame. The soup tastes hot, nutty and slightly sweet.

Ingredients

    Ingredients:

    • 4 portions ramen noodles
    • 400 g mixed ground meat (pork or chicken)
    • 4 scallions, finely chopped
    • 1 tbsp sesame oil
    • 2 tbsp peanut butter
    • 1 tbsp toasted sesame seeds

    For the spicy broth:

    • 1 liter chicken or vegetable broth
    • 2 tbsp soy sauce
    • 2 tbsp mirin
    • 1 tbsp sambal oelek or another chili paste
    • 2 tsp sugar
    • 1 garlic clove, finely chopped
    • 1 piece of ginger (about 2 cm), finely grated

    Toppings (optional):

    • 2 boiled eggs (halved)
    • 100 g bamboo shoots
    • 4 nori sheets
    • 1 handful of fresh cilantro (coriander)

    Instructions

      Prepare the broth:

      1. Bring the chicken or vegetable broth to a boil in a large pot. Add the soy sauce, mirin, sambal oelek, sugar, garlic and ginger. Reduce the heat and simmer for 10 minutes so the flavors blend.

      Prepare the meat:

      1. Heat the sesame oil in a skillet and fry the ground meat over medium heat until fully cooked and lightly browned. Add the scallions and fry for 2 more minutes. Stir in the peanut butter and toasted sesame seeds until everything is well combined.

      Cook the ramen:

      1. Bring water to a boil in a separate pot and cook the ramen noodles according to the package instructions. Drain and set aside.

      Assemble:

      1. Divide the cooked ramen noodles evenly among four bowls. Spoon the cooked meat over the noodles. Carefully pour the spicy broth over the meat and noodles.

      Garnish with toppings:

      1. Garnish the tantanmen with boiled egg, bamboo shoots, nori sheets and fresh cilantro as you like.
