Nam Manao is a Thai limeade made from freshly squeezed lime juice, sugar, water and a pinch of salt. It tastes sour and sweet, and the salt takes the sharpness off the acidity.

Ingredients

  • 4 fresh limes
  • 2-3 tbsp sugar
  • 600 ml water
  • A pinch of salt (optional)
  • 200 g ice cubes
  • 4 fresh mint leaves (optional)

Instructions

  1. Wash the limes thoroughly and cut them in half.
  2. Squeeze the juice from the limes into a large bowl or pitcher.
  3. Add the sugar and a pinch of salt to the lime juice and stir well until the sugar has dissolved completely.
  4. Add the water and stir thoroughly again.
  5. Taste the limeade and add more sugar or lime juice if needed, until it has the flavor balance you like.
  6. Fill glasses with ice cubes and pour the limeade over the ice.
  7. Garnish each glass with a sprig of fresh mint, if using.
