Tom Yum Goong is a hot and sour shrimp soup from Thailand. Lemongrass, kaffir lime leaves, and ginger flavor the broth, while Thai chilies and lime juice bring heat and sourness. You can serve it as a starter or a light main course.

Ingredients
- 300 g shrimp, peeled and deveined
- 2 stalks lemongrass, cut into pieces
- 1 l chicken or fish broth
- 2 tbsp tom yum paste
- 3 to 4 kaffir lime leaves
- 3 to 4 slices fresh ginger
- 2 to 3 Thai chilies, crushed
- 2 to 3 tbsp fish sauce
- Juice of 1 to 2 limes
- Cilantro, for garnish
- Optional: 150 g button mushrooms or other vegetables
Instructions
- Bring the chicken or fish broth to a boil in a pot.
- Add the tom yum paste, lemongrass, kaffir lime leaves, ginger, and crushed chilies.
- Simmer the broth for about 10 minutes so the flavors can develop.
- Add the shrimp and the mushrooms, if using, and cook until the shrimp are pink and cooked through.
- Season the soup with fish sauce and lime juice and bring it back briefly to a boil.
- Serve the soup hot, garnished with fresh cilantro.
