Main course

Tonkatsu, a favorite of Japanese home cooking, blends a Western cooking technique with Japanese flavors. Inspired by the Wiener schnitzel in the late 19th century, it grew into a dish of its own, loved in Japan and abroad for its crisp coating and juicy center. Good tonkatsu depends on the meat, usually pork loin or tenderloin, and on a careful coating of panko, the light, airy Japanese breadcrumbs. You serve it with tangy tonkatsu sauce, fresh shredded cabbage and a dab of hot mustard.

Ingredients

  • 4 pork cutlets (loin or tenderloin), about 150-200 g each
  • Salt and pepper, to season
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 1/2 cups panko (Japanese breadcrumbs)
  • Vegetable oil for deep-frying

To serve:

  • Tonkatsu sauce (store-bought or homemade)
  • Fresh shredded cabbage
  • Japanese mustard (karashi, optional)
  • Cooked rice (optional)

Instructions

    Prepare the cutlets:

    1. Place the pork cutlets between two sheets of plastic wrap and pound them gently with a meat mallet to an even thickness of about 1 cm. Season both sides with salt and pepper.

    Set up a breading station:

    1. Set out three shallow plates or bowls: one with flour, one with the beaten eggs and one with panko.

    Bread the cutlets:

    1. Dredge the cutlets in flour and tap off the excess. Dip them in the beaten eggs, then roll them in panko until fully coated. Press the panko on lightly for an extra crisp crust.

    Deep-fry:

    1. Heat enough vegetable oil in a deep pan or wok to 170-180°C (340-355°F). Lower the cutlets carefully into the oil and fry them for about 3-5 minutes per side until golden and crisp. Drain on paper towels.

    Plate and serve:

    1. Slice the tonkatsu into strips and arrange on plates. Drizzle with tonkatsu sauce and serve with fresh shredded cabbage. Add Japanese mustard and cooked rice if you like.
