Wakame Salad (わかめサラダ) – Seaweed Salad with Sesame

Wakame is a brown seaweed that you buy dried in a bag. In cold water it swells to many times its size in five minutes and turns tender and dark green. With cucumber, rice vinegar, soy sauce, toasted sesame oil and sesame seeds it becomes the salad you know from the sushi plate. In Japan the combination with sesame is called goma wakame.

The light green seaweed salad from the sushi bar is usually a ready-made mix with food coloring and sugar. Your version is darker and tastes more of the sea. Squeeze the soaked wakame out well, or the dressing gets watered down. Toss the salad shortly before serving, because the cucumber otherwise draws out water.

As a variation with spinach and sesame paste, cook goma-ae. For something tangier there is sunomono, the Japanese cucumber salad with vinegar. Hiyayakko, cold tofu with ginger, goes alongside.

Ingredients

    For the salad:

    • 15 g dried wakame (cut seaweed)
    • 1/2 salad cucumber (about 300 g)
    • 1/2 tsp salt

    For the dressing:

    • 2 tbsp rice vinegar
    • 1 tbsp light soy sauce
    • 1 tbsp toasted sesame oil
    • 1 tsp sugar
    • 1/2 tsp freshly grated ginger

    To sprinkle on top:

    • 1 tbsp toasted sesame seeds, white and black
    • 1 pinch chili flakes, optional

    Instructions

    1. Soak the wakame in a bowl with plenty of cold water for 5 to 10 minutes, until it is soft and has unfolded.
    2. Slice the cucumber thin, toss it with the salt and let it stand for 5 minutes.
    3. Stir the rice vinegar, soy sauce, sesame oil, sugar and ginger until the sugar dissolves.
    4. Drain the wakame, squeeze it out firmly with your hands and cut long pieces to 3 cm.
    5. Squeeze out the cucumber slices too and pour away the liquid.
    6. Toss the wakame and cucumber with the dressing, sprinkle with sesame seeds and chili flakes if you like and serve the salad right away.
