Xian Cai Doufu Tang is a southern Chinese soup of salted mustard greens and soft tofu. The broth tastes salty and tangy, and the tofu stays mild.

Ingredients

    Ingredients

    • 300 g salted mustard greens
    • 200 g soft tofu, cut into cubes
    • 1 liter vegetable broth
    • 2 scallions, cut into rings
    • 2 garlic cloves, chopped
    • 1 tsp sesame oil
    • 1 tsp soy sauce
    • Salt and white pepper, to taste.

    Instructions

    1. Soak the salted mustard greens in water to remove excess salt, then chop them roughly
    2. Heat the vegetable broth in a pot and add the salted greens
    3. Add the garlic and scallions to the soup and simmer over medium heat for 10 minutes
    4. Gently add the soft tofu to the broth and simmer for another 5 minutes
    5. Season with soy sauce, sesame oil, salt and pepper
    6. Serve hot and garnish with more scallions, if you like.
