Main dish

Yakitori are Japanese chicken skewers from the grill. You thread pieces of chicken alternately with scallions onto bamboo skewers, marinate them in homemade teriyaki sauce of soy sauce, mirin and sake, and glaze them at the end with sauce you set aside. With marinating time, you need a good hour.

Ingredients

    For the yakitori skewers:

    • 500 g chicken breast or chicken thighs, cut into 2 to 3 cm pieces
    • 1 bunch scallions, cut into 2 cm pieces
    • 8 bamboo skewers, soaked in water for 30 minutes
    • sesame seeds for garnish

    For the teriyaki sauce:

    • 100 ml soy sauce
    • 100 ml mirin (sweet Japanese rice wine)
    • 50 ml sake
    • 2 tbsp sugar
    • 1 garlic clove, finely chopped
    • 1 piece ginger (2 cm), finely chopped

    Instructions

      Prepare the teriyaki sauce:

      1. Stir the soy sauce, mirin, sake and sugar in a small pot over medium heat until the sugar has dissolved. Add the garlic and ginger and bring everything to a boil. Simmer the sauce over low heat for 5 to 10 minutes, until it thickens slightly, and set it aside to cool.

      Marinate the chicken:

      1. Pour 6 tbsp of sauce into a small bowl, 4 tbsp for brushing and 2 tbsp for serving. Put the chicken in the remaining sauce and marinate it covered in the refrigerator for at least 30 minutes.

      Prepare the skewers:

      1. Thread the chicken pieces and scallions alternately onto the soaked skewers. Discard the remaining marinade.

      Grill:

      1. Preheat the grill or grill pan to medium-high heat. Grill the skewers for 10 to 15 minutes, turning every 2 to 3 minutes, until the meat is browned all over and no longer pink inside. In the last 2 minutes, brush them with 4 tbsp of the reserved sauce and let them caramelize.

      Serve:

      1. Drizzle the remaining 2 tbsp of sauce over the hot skewers and sprinkle with sesame seeds if you like.
