Main course
Yosenabe is a Japanese one-pot stew in which you simmer pork belly, shrimp, tofu, shiitake and napa cabbage in dashi. Soy sauce, mirin and sake season the broth mildly and savory. Set the pot in the middle of the table and everyone takes what they like.

Ingredients
- 1 liter dashi broth
- 200 g thin slices of pork belly
- 200 g shrimp, peeled and deveined
- 2 blocks tofu, cubed
- 200 g shiitake mushrooms, stems removed
- 1 bunch scallions, cut into 5 cm pieces
- 1 napa cabbage, cut into strips
- 100 g glass noodles
- 2 tbsp soy sauce
- 1 tbsp mirin
- 1 tbsp sake
- Salt and pepper to taste
Instructions
- Prepare the dashi broth and warm it in a large pot on the stove.
- Add the soy sauce, mirin and sake to the broth and stir.
- Arrange the pork belly slices, shrimp, tofu cubes, shiitake, scallions and napa cabbage in the pot.
- Cover the pot and simmer everything over medium heat for 15 minutes.
- Add the glass noodles and cook for another 5 minutes, until soft.
- Season the hot pot with salt and pepper.
- Serve the yosenabe hot, straight from the pot.
