Hojicha Latte (ほうじ茶ラテ) – Roasted Green Tea with Milk

Hojicha is Japanese green tea that producers roast at high heat until the leaves and stems turn brown. The tea tastes of nuts and caramel and lacks the grassy note of sencha. It has less caffeine than matcha. For a latte you mix ground hojicha with milk, hot with foam or cold over ice.

For the base you whisk 4 g hojicha powder with 60 ml of 80 °C water until no lumps remain. With a milk frother or a bamboo whisk this takes 30 seconds. Heat the milk to 65 °C. Hotter milk tastes cooked and foams worse. For the iced version, pour the concentrate over cold milk and ice cubes. If you only have tea leaves, brew them stronger; the amounts are in the note.

With green tea powder, the same principle gives you a matcha latte. Also roasted is Genmaicha, green tea with roasted rice kernels.

    • 400 ml cold milk (3.5% fat)
    • 200 g ice cubes

    Instructions

    2. Divide the concentrate between 2 warmed cups, pour in the hot milk and spoon the foam on top.
