Honey Banana Fritters, Chinese Restaurant Style

Honey banana fritters are a fixture on the dessert list of Chinese restaurants, usually served with vanilla ice cream. The banana pieces sit in a crisp batter of flour, starch and cold sparkling water. You deep-fry them at 175 °C, drizzle warm honey over them and scatter on toasted sesame.

For Ba Si Xiang Jiao you also pull the fried bananas through hot caramel that spins threads and turns hard in cold water. The fried banana stays with honey and takes less practice. An Indonesian relative is Pisang Goreng.

The batter is almost the same as for sweet and sour chicken, with a little sugar and no egg. Crispy duck works as a main course beforehand.

Ingredients

    For the batter:

    • 100 g all-purpose flour
    • 30 g cornstarch
    • 1 tsp baking powder
    • 1 tbsp sugar
    • 1 pinch salt
    • 170 ml ice-cold sparkling water

    For the bananas:

    • 4 firm bananas
    • 1 tbsp cornstarch for dusting
    • 1 l vegetable oil for deep-frying

    To serve:

    • 4 tbsp honey
    • 1 tbsp white sesame seeds
    • 4 scoops vanilla ice cream

    Instructions

    1. Toast the sesame seeds in a dry pan for 2 minutes, until golden yellow, and tip them into a bowl.
    2. Mix the flour, starch, baking powder, sugar and salt. Briefly stir in the sparkling water until you have a thick batter. A few small lumps are fine.
    3. Heat the oil in a tall pot to 175 °C.
    4. Peel the bananas, cut them on the diagonal into 3 cm pieces and dust them with starch so the batter sticks.
    5. Pull the pieces through the batter and fry them in 2 batches of 3 minutes each, until golden brown. Turn them once.
    6. Let the bananas drain on a rack for 1 minute.
    7. Warm the honey in a small pot for 1 minute, until runny, and drizzle it over the bananas. Scatter the sesame on top and serve with vanilla ice cream.
